Grilled kid ribs

Snake Method

Each grill starts from a fire, so let's start by preparing a Snake, that is a serpent of coals on the opposite side of which we will place the ribs. The important thing is to keep the temperature as stable as possible between 80 and 120 degrees.

We then move on to prepare a "rubbing" that is a set of salt and spices with which the ribs are coated, through an energetic massage with extra virgin olive oil.

Finally we place the ribs on the opposite side of the heat and, if we have a BBQ with a lid, let it "sweat" for about a couple of hours or so.
