Grilled radicchio

fresh and not frozen if we want to enjoy it at the top

This is certainly the most suitable vegetable for grilling.

First of all, let's choose fresh radicchio in season, clean it by removing the hard outer leaves, wash it under plenty of cold water leaving the whole tufts.

Drain it, dry it carefully, even with the use of a cloth or kitchen paper, cut it in half vertically and, placing it on a serving plate, sprinkle it with extra virgin olive oil.

Now we put the radicchio on the grill for five minutes on each side and remove it as soon as it is crisp. Let's consume it very hot, on the fly, adding salt and pepper or put it in preserves in extra virgin olive oil.
