Salmoriglio sauce

all-Italian sauce very common in our South of Italy

Salmoriglio sauce (in Sicilian and in Calabrian sammurigghiu) is used in the Sardinian tradition but also in the Calabrian one and is produced with:

  • a lemon
  • 10 gr. of parsley
  • garlic cloves
  • 100 ml of extra virgin olive oil
  • 50 ml of warm water
  • salt
  • fresh hot green chilli
  • abundant dried oregano
  • basil

We prepare the sauce by squeezing and filtering the juice of a lemon, finely chopping the parsley with the garlic. In the meantime, put the warm water and oil in a bowl, mixing them with a whisk, add the oregano, the chopped parsley, salt to taste. and some fresh green chilli. Let's discover a new flavor, especially great for grilled swordfish!
